If you are referring to baking pans a mixture of the baking soda mixed with dish soap and lemon essential oil works wonders.
I use low odor oven cleaner and set them outside for a while, then bring in and scrub, the stuff comes off quite easily. Then make sure you get all the cleaner off your pans and you are all set to go. That is if it is baked on grease and such from baking. Make sure the cleaner you use does not have to be heated, otherwise do it while cleaning your oven and just set the pans in the over while the oven is heating. I use the no heat oven cleaner for my toaster oven as well since I use that more often than my larger oven especially in the summer.
Wash in the bathtub or spray oven cleaner on them, place in jumbo plastic garbage bag, twist closed and set in sun for a bit. Then hose off.
