How can I put a tile back splash in my RV?

I'm concerned about the grout and the stuff you put on the tile to adhere it to the back Causing mold or mildew.

I wouldn't think that a tile with grout could hold up to the rigors of moving down the road. I am afraid it would crack and always look bad UNLESS there is an acrylic grout that a home improvement EXPERT (not me, certainly) would suggest that could do it.
Otherwise, I agree with Jacks, above, peel and stick sounds smart.
Maybe try peel and stick vinyl floor tile, if you don't want the hassle of ceramic.. Or a piece of tin cut to size, with a strip of caulking around the back edge to prevent moisture from getting behind it.. The adhesive and grout for ceramic shouldn't cause mold or mildew, unless there is moisture coming in through the back wall of it.. The grout keeps the moisture from getting in between the tiles from the front..
