Do you know the variety that was planted as if they were already grown seedlings it is possible it had the wrong tag in them.
do you know what variety they are, and how big are they? they could just not be ripe yet (the big Italian ones start out green, get fat and purple, then get darker...) or you could have maybe gotten a 'white' eggplant, which will keep getting lighter, not darker.
eggplant can be any shade of white to purple. Pick one and cook it. If it tastes good then you re good to go.
Hi Sue! Seems your unexpectedly colored eggplant could be a simple error, a mutation or nature at play. I'd check to make sure what you planted. If that's not possible, it could also be a light problem. If they get too much sunlight between the leaves they might be 'burning.' I'd harvest one and cut it to see what's going on. Despite a coloration problem, they're probably edible.
1 plant is the long Oriental variety the other is supposed to be a 4" one. Both are getting really pale. i will pick some and try them:)
