I must confess that I find that space really odd! Look unfinished. Perhaps if you wrap the shelves around the corner, similar to the picture below, it might look a bit better. Adding a heavier looking shelf as well as adding more shelves from top to bottom might help
you could add little shelves in it and fill it with cooking spices! look up thins on pinterest! I always find cool ideas there!
Your cabinets appear to be a fairly common style. You might check your local home centers to see if you can find another tall pantry cabinet just like the one you have. Then, remove the floating shelves, and put the new matching pantry cabinet in the open space. If you do this, I would switch the hinges on the current pantry cabinet so the door would open the opposite way.....That way, it would look like one large cabinet the opens from the middle.
I would make this my coffee nook. With my coffee maker and cups on the selves, sugar , creamer, decorative containers above holding coffee grinds and tea bags.
Or adding thicker shelves, making it my cook book area, again using decirative items that you may add that go with that grouping. Mixing bowls, mixer on counter, books on selves, etc:

The top section of the 2 part cupboard looks like it would fit nicely under the shelves beside the bottom section.. Without measuring it looks like it would come just up to the top of the wainscotting, giving it a nice height with your window bottom and would fit in with the shelves you have on the wall.. It would also give you 2 more surfaces for items to go onto..
Michele has a really good idea. But if it's not in your budget, here are some ideas that might work. Then make it look like it's made for something specific. Cookbooks, spices, or a mixture of each. I hope that helps.

If I was renting the place I would throw a tension rod up in front of it, and hide it behind matching curtains to the window. Then just use it for long-term storage.
Use the space for storing your cookbooks and recipe files. They'd be out of the way of cooking splatters but near enough to be handy.
You could put a curtain rod there and hang a long curtain to hide that.
I am assuming this is your own home? It would be a fairly easy job to detach the entire unit from the wall and move it to the right next to the window. If it is too deep to fit in that spot, could you or a handy friend relative, trim the back down so it would fit that space? Then move the shelves over where the cupboard/cabinet had been. It's a little odd in being taller and deeper than the other cabinets. But the balance would be better to keep it in this area.
Well, I think if you removed your shelves and made hanging storage for taller items such as a Swiffer, a broom and dustpan, etc. plus a shelf or two for other cleaning supplies up higher, and a folding step stool to help out, that would be a great use of this awkward space. Some homes don't have any room for these items.
I think a bifold door would be great, but it
doesn't look like you have enough space. The curtain idea is inexpensive and easy ( we like that!), or try to find a matching door to install on the wall.

Try glass cabinets in the corner and have antique stuff in it . The link i shared also has a light in it and adds beauty to the corner . Its affordable and neat
take your measurements to your local hardware store, most hardware stores have hired people who love to "fix it" at home themselves, tell them what you need and see if they can recommend a certain door, hinges, etc. or for less work put up a spring loaded rod with a hem in one end of a sheet or pillow case. If it were my corner, I would buy a frame to fit it and get a glass company to match the same glass design or close to it and put a glass cabinet door on it.
Ater looking at your picture, I believe that space was left blank because of the curtain and rod. I think I would take out the shelves you have and just leave it empty....Pull your curtains to the left and right and with the curtains, you may not even notice the empty space. Otherwise, put a small stepping stool there, a tall plant that gets light from the window, or maybe even a tall skinny mirror or a piece of art that is colorful and tall and skinny.
I have a space just like that and I turned it into a mini bar area. I put a counter high with three draws with a mosaic tile top, using some of the floor pieces to blend. then hung 2 shelves for liquor and hung wine racks under each shelf. If I can remember I'll post a picture when I get home later.
I would build slanted shelves from he edge of the exsisting cabinet to the edge of the window frame, all the way down with space enough left to put a decorative basket directly on the floor to put tablecloths, placemats, etc. On shelves you can put real or faux plants.
Can you give me a picture example? This sounds very interesting.
