Lettuce gets bitter when you have heat during the growing. It can be reversed if you clean the lettuce and let it sit in the fridge a few days until it reverses.
I read all of that on the net, they say it is the sap in the leaves.
if you let your lettuce grow to large it tends to get bitter, its better to pick when the leave are not oversized. hope this helps you.
