Use plastic boxes, that you can slide under a bed, and only keep out what you need for this season. NO EXTRAS. Then, you can change boxes when the next season comes. If there is a storage area, above the ceiling, then you can store some there, or under other items. It sounds like it is time to really thin some areas out, and this is tough. I know. Best wishes, J.
Honestly, take a look at IKEA if you have one near you... they have great ideas! Also, i've learned that less is more.
Family Handyman https://www.familyhandyman.com has tons of wonderful ideas for storage, especially in tight spaces.
First off, how wonderful of you to do what you are doing for your Mother-in-Law. Now, for the problem, take a look around and see where the hidden spaces are - like under beds, near the ceiling, wall space, etc., You can use tension rods, floor to ceiling poles with baskets, Command hooks for hanging stuff, and sliding bins for under the beds, sofa, coffee table, whatever. You go, girl!
Having lived in several different log cabins during my career, here are some things I have done.
If the roof is set high enough, add a loft.
Create storage under your beds with either drawers on casters, or old kitchen cabinets to make a raised bed.
Cut a hole in the floor boards to dig out a root celler/pantry, use cut boards with cross piece at each end and hinges to make lid, drill hole for a finger lid lift. Line it with wood and then flatten cans to keep critters out.
Shelves add storage. You can make floating shelves.
If you have out buildings you can use them for extra storage, build cubboards.
If you don't have a porch, add one cause you can make lots of extra storage benches on it.
If you're going to be there for years, I would cut and season logs this fall to add another wing for you two.
or get a trailer to add to the property.

Thanks for the advice! Hidden space is a premium in this cabin as is wall space but I will sure look to see if I can use some of your ideas!
Can you thin out the spices? Or throw out any old ones, and keep the newer ones? You are in a real puzzle aren't you? Is there an upstairs? Since there is boxes already under the bed, I would look at those again, to be sure you can't thin those out again. One note of your mom-record any changes you see in her, and go with her to the dr., and slip the receptionist the note, before they call you back in to see the dr. This will show him, of any changes since the last appt. I can't think of anything else, What about a plastic milk case, it is about 18" square, and you can stack these in the bedroom, and arrange goods on this? You will be in our thoughts and prayers, thru this ordeal. Sort out kitchen goods too, like extra dishes, pans, etc. There may be a group of supporters that know what to look for next, that can help you, too. Be sure there is no cracks or holes in the logs, to allow animals, or heat loss, too. I will be thinking of other ideas too. Is there room under the couch? Bless you, Sincerely, Judy.
