Check out the paint kits available at your local home center for kitchen countertops. You can change the appearance fairly easily. I actually think a white laminate countertop can look very modern if you add a few modern accessories or pops of color on top of the countertops....or even a new backsplash to add a bit of interest.
You can get a paint made by Rust-Oleum that is specifically for countertops. We purchased it at Lowe's and used it on our ugly Formica. It covered really well. It's thick and gloopy and once it's on a surface it's very hard to remove so be very careful. We still have a few drips that will not come out of our sink. It comes in a variety of colors but it does wear after time. Definitely use a cutting board and not the bare countertop. It chips but not too bad that you couldn't finely sand the edges and touch it up. It's got a very strong odor so make sure your area is very well ventilated.

Contact paper! I lived in an apartment that had very old boring countertops. I used contact paper and when I moved I was able to pull it off with no damage to countertop.
