I wouldn't. You don't know what chemicals were used when this wallpaper was made and it could be potentially dangerous.
i am not sure what to do then. the kids aren't around when I'm working and I clean every last piece but this project will take a couple of weeks
have the kids sleep downstairs until this project is complete.

The smell is more likely the adhesive. It really is harmless. Just the smell of wet adhesive. You can open a window to get rid of the odor.
Use a fan and open the windows for ventilation and keep the kids out of the area if at all possible. It would be helpful if you had an idea about how old the wallpaper was so you could research what the paper itself and the adhesive is made of.
