Grout is difficult to remove but there is a tool you can purchase that helps somewhat. It is a tiresome job and don't get in a hurry or you scratch your tile. Use a stiff steel brush to clean out the space when you finish so the new grout will not be contaminated. Now if the grout space is 1/8 of an inch, I would say forget it. That is nearly impossible. I would just chisel it all up and start over. Don't mean to be discouraging but I have gone through this job and it is not fun. Hope I have helped some..
If you just want to change the color, then just paint it with the right-sized brush. Immediately wipe off the tiles if you get paint on them.
