Print fancy signs on your computer and stand them in fancy place card holders, fancy miniature picture frames or the picture stands. Too plain for your taste, just add some flowers or jewel like pieces around them.
I don't think a nice folded tent card with calligraphy labeling dishes detracts from presentation. Use fancy paper.
I appreciate seeing nice easy-to-read cards to label foods on the buffet line. I don't appreciate cards that are hidden behind dishes, or that are written in fancy, fine lettering. A skewer stuck in modeling clay with the card skewered at the top is great for chafing dishes and tall cake plates. Tall cocktail toothpicks in modeling clay are better for table level dishes. The toothpick and skewers can be stuck in cupcakes, cauliflower and broccoli quarter heads, into soft rubber animals, and into candles. Best wishes 😇
All great ideas! Many of the same things I was going to suggest. Another idea is to use the wire photo holders - purchase plain and embellish to go with your color scheme or party theme. Print the item on cardstock in a pretty color that stands out enough to be noticed in an easy to read font in bold. Links are just a couple examples.

Place tiny numbers on each platter and place a chalboard/bistro sign nearby with the key that identifies each dish. For example: #1 = Quiche
