What we did was put three raised bed gardens one on top of the other and then we added dirt to fill up the beds. That way people in wheelchairs or people that cannot bend over a garden can still garden. (We made some of these tall gardens for a Senior Living housing development)

Hello Chase, I have a bad back too. Last year my sons made me a raised garden bed. They used landscape timbers. 5 timbers high. Then they laid weed fabric down. And filled it with 1/3 soil, 1/3 sand and 1/3 manure. Now I am able to sit (on a 5-gallon bucket upside down) and garden. I am so happy with it. And I am having my best harvest ever. Hope this helps you. Good luck and Happy Gardening.

I used empty metal barrels to plant in this year. I cut them in half with a grinder and drilled holes in the bottoms for drainage. I put rocks in the bottom for drainage and filled with potting soil. You could not cut them and they would be waist high. I had thought I would paint them but I never got the painting done and they are very weathered looking. My tomatoes, chili herbs and squash have done very well this year.

Make 2 by 4 legs and raise them up to the height you need. I would worry about the saw horses getting bumped. Put the legs on and bracing in between so then you can make it a height that works for you.

I would bolt the beds to the saw horses and be sure to provide a way for water to drain.
