Perhaps concrete backer board for wet locations in bathrooms? About 1/2 inch thick. Heat resistant, since it is concrete. Cut it to size with carbide blade in circular saw. Durarock is one brand name.
Find a place (outlet store) that buys kitchen equipment when restaurants go out of business. Everything is usually in pretty good to the sometime gem of almost brand new but always priced at a really great price. I found everything I needed for my outdoor kitchen (stainless steel) won't rust, easy to clean and don't think I could have gotten any of it in the great shape it was in at the price it was.
Ikea has the stainless panels. they work great. We used in our vacation home.
