Gravel and rock is hard on the dogs feet if you have a small dog. Larger dogs don't seem to mind as much. Mulch is softer but stays wet.
I have both typical bark mulch and in some areas, a "tumbled" pea gravel. Costs a few dollars more but it takes the hard edges off so if it gets between the dogs paws, less likely to cause injury. I have from Chihuahua size dogs to Rhodesian Ridgebacks - they scamper happily over everything withno problem. I would test a small area first before ordering for your entire property.
Pavers would keep the nails worn down and have less problems with rocks/gravel shooting all over the yard when they run.
