You can buy plastic fencing pieces that are a foot tall at the dollar general store. They hook together and work well for garden edging. This is what I used.
there is edging that you line up the way you want. It is held in with spikes the go in so easy all you need to do is pu them into the ground. The best for money is the 40 foot. You can get it at Walmart Home Depot. Any place the sells lawn items. I have 4sets of 40 ft. Best thing about them is you can remove them and then use them again next year. Look on line at Walmart . Com. Stores usually don't sell 40 ft. Can buy extra spikes. Usually need more then comes with the kit.

Lucky me, I live across the street from a river. I haul good sized river rocks (not the small ones you can buy retail) up from the river and use them to edge my flower beds. It's a back breaking job, but it does provide definition and also keeps me from cutting the electric line for my invisible dog fence.

The will bend very easily and can be found at HD and Lowes and all you need is a rubber hammer to hammer the long spikes in the ground. comes in 3 or 4 different colors as well. This is the dark brown, picture doesn't really show the true color.
I like to use bricks, especially if I can get them for free. Last year my sons built a raised garden for me. Bad back and getting older. But the landscape timbers they used look great. You could also plant marigolds around your garden. They attract bees that you need for pollination.
