If it were me, I would add another wire shelf to it for more storage.
I agree with Peg. Add another shelf. Some thrift store baskets. Dollar store containers.
definately another horizontal shelf I would try to go only 3/4 way and add some vertical drawers to hide the less aesthetically pleasing items.. I would use baskets and add a towel rack on side
Doesn't look sturdy enough to close in with plywood. So I would go with large baskets underneath, and maybe another wire shelf.

Gosh if you lived closer I would give you a little wire four basket on wheels cart I have. It would be perfect for under your counter It is vertical and narrow and not too long. Perfect for fruit/veggies.

dang it. It won't let edit my comment but I was going to add that with another shelf you can add wooden or wire baskets for fruits and veggies and leave the bottom shelf for your coolers
You could actually add TWO more shelves if you moved that current one all the way to the bottom, just so the item aren't sitting on the floor. If you need space to hang things, you could add a towel rack with "S" hooks on the short ends.
All good ideas, make sure your baskets/bins have straight and not tapered sides to maximise your space.
