We recently purchased a home that has real brick floors in the foyer, hall and sunroom - not sure whether to damp mop with only water, use a special cleaner, etc.?
Using hot, soapy water and a scrubby sponge or brush, thoroughly clean the surface of your butcher block. Rinse the butcher block with white vinegar. Allow the vinegar to sit while you complete the next step. Pour about 1/4 cup salt into a bowl, and stir in enough lemon juice to make a paste. It’s not an exact science – adjust the consistency as you go, to make a workable paste. Thoroughly scrub your butcher block with the lemon-salt paste. This will remove odors and bleach out stains. If the paste gets too dry, sprinkle on a little more lemon juice. Rinse well, and squeegee off as much water as you can, and allow the butcher block to dry.

Wash with soap and water, lightly sand using a higher grit, then graduating down to a small grit so its nice and smooth, then oil with mineral oil.
I use 7th Generation disinfecting spray....I love the fact that it uses (food-safe) botanicals to clean everything. When it starts to look dry I oil it with butcher-block oil at night, and wipe off the residue in the morning. Hubby built it, so I take good care of it!!
To clean a butcher's block, you'll need abrasion and something to disinfect the wood. It's best to use a lemon cut in half and kosher salt. Sprinkle kosher salt over your board, then rub the salt into the board, with the cut lemon. The salt and lemon mixture will scrub your board thus getting into those little crevices, and you'll disinfect the cutting board at the same time then wipe with a soft cloth to remove the lemon and salt. You don't want to wet your board because you'll warp the wood. Finish your board with a food-grade mineral oil, such as Howard Cutting Board Oil or the Howard Butcher Block Conditioner.
