We are doing the same thing throughout the house. Besides all of the pluses already mentioned, we have noticed less dust and air drafts in each room done already.
Here are two pictures showing the molding I used for the ceilings instead of cove molding. I loved that I did not have to miter any corners as I used the corner blocks instead. Also the moldings were easy to attach as the were flat against the wall. Cove molding is beautiful but a little difficult to work with and unless you intend to paint it, caulking the joints does not help hide any imperfections.
The second picture is after I sold the house to a corporation who was going to demolish it. I gave away the corner fireplace.
