corian cuts clean and easy with router bits. Don't breathe the fumes.

You can use a circular saw with a 40 tooth carbide blade.

Wood working tools work well.
It does require a specific type saw (sorry I can't recall the type), but with the proper equipment, don't think that it is especially difficult to cut. Corian makes a great countertop, very durable, and some gorgeous patterns.
