Remove as much of the interior frontage as you can, seal it up with insulation/plastic. Then frame it out using wood. From there you can cover in fabric, make shelves, make a covered box with a scene painted on it, or stenciled, make a herringbone pattern or compass rose out of paint stirrers or sample wood pieces from Lowes/Home Depot.
If it's a window a/c it's just screws and window that comes down on the unit. If you pull front of a/c off you should see screws along bottom where they go into the seat. Unscrew them, often window may have a couple of screws as well. sides could be built in or just simple slides held by screws. If all screws are undone just raise window and a/c will fall out. I pulled an old one so I know.
If it doesn't work, remove whatever is keeping it in the wall or window and just push it outside to the ground. Then cover the hole with insulation and wallboard inside and whatever is on the outside of the house.

I would be sure to pack the hole with insulation, and put something like tar paper or tyvek over the outside to make waterproof before you put siding, stucco or whatever siding you have outside.
Do you have room for a small hutch with doors? Kind of like the old style TV entertainment centers. You could cut a hole in the back of one slide it over the AC and close the doors. You can probably find something at Restore or thrift shop. I see a lot of them on sale on Craigs list, because people are getting large flat screens that don't fit those. Good luck with your project.
