I watched a YouTube tutorial over the weekend where the lady scrubbed the counters down, then primed them. Then she took a sea sponge and that craft paint you get at Walmart and blothced on the 4 colors she choose. When she was done she sealed with poly. It actually didn't look too bad, and the only fault I could find with it is that I think it would cloud up if you put a hot pan directly on it.
I suppose if you sealed the heck out it those might work. I think the biggest hurdle to the life expectancy would be if they were used a lot. We seriously considered doing something with ours, but I cook, bake and can a lot, so I don't think it would last long for me
