Some old windows have lead paint. Most of the projects I have made with old windows, I just leave the old paint alone. It is what adds charm to the project. If you MUST scrape it or sand it off, wear a mask and gloves to help prevent contact as much as possible. Vacuum up all residue to prevent it scattering around.
Use citristrip safe non-toxic remover,wear a mask in case it is lead paint
One of the perks of being old is that you don't worry about things like lead paint! or asbestos or radon etc. If I wanted to use an old window, I would scrape, sand or whatever outside and wear a mask (which is a good idea anyway) You won't be eating it and as far as I know that is what is to be feared from lead paint.
There are masks rated for lead. If the paint is chipping or peeling it really needs to be sanded.
