You could buy a bunch of 2 x 2 lumber and make your own. http://addicted2diy.com/2013/11/21/how-to-build-your-own-butcher-block/
you can also buy butcher bock wood at big box hardware stores
I just did that..but it is 25 inch wide and 10 foot long.
I went to a lumber mill and had the guy cut me a couple slabs of pine. I put them through the planer and sanded them a lot, rather my son put them through the planer and sanded them like crazy. We glued them and used the kreg tool. The counter is three inches thick...and after my son was done with putting the boards together I stained and waterproofed them.
I went for farm house kitchen, and the counter looks much used and very much like a butcher block.
When you do a counter top make sure you you do the top, bottom and edges...wood breathes and you do not want the wood to cup.
I used Helmsman spar Urethane. It is used to protect wood from rain and UV rays...it is used on boats..but do not use your wood counter as a butcher block..it is not food safe. I used English Chestnut as the stain and the Urethane has a golden color so I think it makes the DIY counters look antique...and pretty good with my ship lap wall and open shelves.
