Depending on how bad the warp is you can use an electric planer.

You could just plant a climbing type of plant at the base of your mailbox. Nobody will notice that it's not straight.

Then I agree that the climbing plant to cover the post is a brilliant idea. Try to find something that is evergreen, and will not grow too fast so you can control it. Wish I could suggest one, but of course it needs to be chosen according to your zone. Would love to see a photo when it's done :)
