Cut it down to ground level and kill it with vinegar. Literally drown the entire area in vinegar. I would spend the money for agricultural strength vinegar and it needs to be reapplied several times and after each time it rains.
Not a fan or chemicals ... so ... the only way I know to be rid of bamboo or other invasive hearty plants such as kudzu or any other kind of vine is to cut it all down to ground level and either keep it covered with a dark tarp for a full growing season -- or two -- so it doesn't have the sun it needs to sprout and then plant a hearty grass and mow and mow and mow.
Bamboo roots, now unlike vine roots, seem to spread underground so cutting all the grass around it matters too.
