Although using pallets for other purposes is a huge fad right now, I would caution you against trying to use them for headboards.
Pallets were made to be used outside. Chances are if the source of where you got them from is no longer using them for outdoor use, then they are probably most likely not at all level, falling apart, rusty, broken, cracked, maybe rotting, and very dirty. They are very rough and sliverry to work with.
You do not know what kind of substances this wood has been in contact with, and what kind of dirt, possibly oil, and critters are still hiding within its fibres. Do you really want to put your clean bedding linens against this surface?
The heat from the interior of the house might bring out some of these undesirable substances and cause a foul door as well.
Also a consideration is how are you going to attach the headboard to the bed? Proper hardware is not cheap, and when you try to attach it to the pallet wood, it might begin to split and disintegrate.

Not Just Another Pallet Headboard
You can actually get the same look using fence slats at your local hardware store. You can stain them and then use a belt sander to give it the weathered look. I've 'reused' actual pallet board and I agree with flipturn7, not sure you would want that in your house. Great for outdoor ideas but I'm still finding bugs coming out of mine that are outside.
