Was it never finished after you closed it off? I would drywall it with green board, tape and mud, sand prime and paint.

or you could use the recess if its there, finish it for a bottle knook by also finishing with green board, seal with waterproof membrane and tile, or caulk, plaster it, prime and paint with Rustoleum Watertight.

The window is still in the bathroom with Sheetrock behind it. An addition was put on the house losing the function of the window.

Argh,,,, that should have been removed before sheet rocking. Think your best bet is to now sheet rock the inside, and use green board, tape and mud, sand and paint with primer and some semi-gloss kitchen and bath paint.

PS. I think I would also add some rigid foam insulation next to window before proceeding.
