I just leave mine in the ground, and they come back every year.
http://getbusygardening.com/overwintering-tender-bulbs/ has a really good article on overwintering calla lilies (as well as other tender bulbs, etc). That said, we live in Michigan, now Zone 6 (used to be 5), and I don't do anything to my callas other than mulch them heavily (as stated in the aforementioned article). I wait until frost, and load on the mulch as I do when I put my garden to bed. So far, so good.
I'm in Michigan and I dig mine up each year, put them in potting soil, then in a burlap bag and put them on a shelf in my garage. The garage is unheated but they don't freeze
I just leave them wrapped until spring. This is what the nursery I bought them from years ago, told me to do.
