If you are looking to update, they do sell peel and stick tile for backsplashes at places like Lowes and Home Depot, this gives a quick and temporary change to the look.
Stick on Tiles
A really cool look is a self stick tile that look like old tin ceilings. I got them at Lowes. They're about 12 X 12, so installation goes fast and they're easy to cut because they're plastic.
