Winter, or can I just remove part of the top layer?
They may be hardy up to Zone 8. Otherwise you need to dig them up.
1. Cut back foliage to 2-4 inches above ground
2. Dig up and remove soil
3. Cut out anything that's rotten
4. Leave upside down to dry
5. Pack in sand, vermiculite, packing peanuts and store in a well-ventilated place 40-45 degrees although they'll tolerate 35-50 degrees
What is your location so the proper answer can be given
I live in WI and have to dig mine up. I dig the tubers up and then cut off the foliage. Then I put them in a paper bag with peat moss and then in the basement for the winter. Once all signs of frost are gone I replant them. If the tubers seem wetter then let them sit for a day to dry out a little, but not in the sun.
