How to dig and store potatoes from my garden

    Dig potatoes after the tops are starting to die. Place potatoes on a bed of hay/straw and pile more straw on top. Keep layering potatoes and straw (into a pyramid) ending with a lot of straw. Basically you are burying them in straw.

    You can use a pitchfork and carefully dig under the potatoes and lift up. To store them, layer in dry sand in a cool, dry, dark place.

    Dig them up and leave dirt on them. Store in cool dry space,
