We had a bi-fold door on the bathroom, of all places. The Squire simply put a piece of paneling on the inside, and I finished it to match the rest of the room.
We did that. We used French doors to keep the width, but they had to be trimmed to fit the odd sized opening. The rails were removed and spots for door hinges were chiseled out carefully. After the doors were in, trim was added to finish it . All of the wood had to be stained to match. This was not an easy job. You could also pull out the bi-folds and frame, narrow the doorway, fix the sheetrock and put in a standard preframed door. That would be faster, but still requires some skills.
