You can use a foam baseboard which is waterproof and caulk the seams. Some use rubber baseboard that comes in a wide range of finishes and colors. Some use wood baseboard and when painted is moisture resistant. You can look in the tile department of of Home Depot, Lowes, and Menards.
They also used to wrap linoleum up the wall with a piece of metal edging on the wall, which I really liked as there was no seam and 90 degree angle for crud to accumulate.....just a nice curve and much easier to clean
