This is a major project, that if completed correctly, can give years of service.
However, there is a high risk of unwittingly messing something up, which will result in large problems and large cost to take three steps back and fix it.
If you do not have any previous experience with construction/tiling, then I would suggest that you go the route of purchasing pre-built shower surrounds/enclosures, and the pre-built bottom shower pans.
You can buy low/zero threshold shower pans, or you can have someone custom make one, there are 2 types of drains for them.... center or long linear ones. http://www.homedepot.com/s/zero%2520threshold%2520shower%2520pan?NCNI-5 there are some videos on YouTube how to convert to a roll-in shower for a wheelchair access.
