Poly is the easiest of finishes, is it an old can? Start with a fresh can, and pour in a little paint try and use a smooth foam roller, then drag a good brush lightly over it. 2 light coats is better than one thick uneven one. or get a spray can and hold far enough away, and lightly coat the table, again 2 light coats.
Polyurethane is probably one of the most durable finishes, I have a number of antiques my dad refinished back in the seventies, including my claw foot dining room table and chairs. They look like they were refinished yesterday.

Thanks for asking HOMETALK if there be another product for sealing your kitchen table so you can elimiinate brush strokes and uneven poly layer :)
proper preparation of the surface, and the right brush -- and VERY thin application; allow to dry thoroughly, and use 000 steel wool between coats --- the Spray is great -- but position the table so that the surface is vertical ---use sweeping sprays at a proper distance.
You don't say how old the table is and it's underneath material. You might have to sand it, with an electrical sander. You can rent one from Homedepot or Lowe's for 1/2 day. Use a flat paint ,let it dry one day, and finish with a high-gloss. You shouldn't have streaks or blobs. If you varnish, then get a good sealer, ask your hardware store for some suggestions. If you do the varnish, when it's time to clean it, use Murphy's Oil Soap.
The can is new : ( I have watched every utube video on tips. I think one time I even tried standing on my head (kidding). Thin coat ...sanding....waiting a day between all coats. At this point I think I am a Polyurethane flunkie. Poly verses Jill....Poly the winner.
