Prune after the tree has completely ended fruiting for the season. Or, if you feel it is too cold to work outside, then prune in the spring.
But the timing for pruning in the spring is a little trickier, as it must be done before the tree starts budding, or sprouting. If it is blooming already, then you've missed the window, and must wait until fall.
