If you use paint, you're going to lose the beautiful countertop color you have. I'm thinking maybe you meant paint more as a method than as a product. I found a short article by Bob Vila which explains how he used Minwax Polycrylic to renew the finish on his laminate countertop, I would guess that it would work the same on Formica because it's a brand name for a laminate. BTW, I don't think his pictures are very helpful because you can't see what he did due to the color of the countertop. But his wording is good so go by that.

First, call a Homedepot or Lowe's paint department. Tell them what look you want the counter tops, and they can tell you which product will give you that look.

Polycrilic I believe will work without yellowing.
My old gray formica counter tops in the half bath were boring and damaged. I painted with pearlized white acrylic paint from Hobby Lobby (about 3 coats) followed by another 3 coats of clear polyurethane. The polyurethane gave it a slightly yellowish cast, but it's still a big improvement, I think. Then, I did the same thing to my sink using gold acrylic paint; all under $20.00.
They make wax for formica countertops. I would try that first.
When I was installing new countertops my contractor suggested automobile wax there are some that do not require much buffing . . AND BTW: Use some rainx on shower walls to prevent hard water spots!
