You can try the baking pan trick! Place an upside down baking pan on top of whatever you're cooking on the stove to prevent splatters.
There is a cooking tool called a "Splatter Shield" it looks like a round, or square screen with a handle and is larger around than a 10 inch skillet.... put it over cooking food to prevent splattering... wash in dish washer
Just purchase splatter screens. I cook every single day and clean the stove after each use, as I am sure you do too. Moving a stove means moving gas and or electric connections. Worth the cost if it improves the flow of your kitchen. They make pop up ventilation too. Might be something to consider. I do not fry food (bacon is grilled outside - a rare occurrence), and when you do, make sure people sit further away. Check these links out.
