Check out DIY network or HGTV ...for ideas... but be aware that you are making a Structural change and you may need to hire a contractor and get permits.
If you plan to remove trusses, you need a structural engineer.
Truss roof cannot be converted to cathedral. The design and construction is different in each roof. The complete roof would need to be removed and new one built from scratch. Removing any of the truss supports can weaken and collapse the roof.
