I did this between my bathroom and bedroom. Worked great. I don't have doors on the bedroom side because I added extra shelves and filled them with books. Also, I left one shelf at the top open except for a collection of colored glass vases, bowls, etc. I have a light on a timer in the bathroom. It makes a nightlight for the bedroom, up high where it doesn't bother me while I try to go to sleep.
First you have to make certain you don't remove studs if they are part of a load-bearing wall. If you want wider cabinets than what you can get by making in-between-the-studs cabinets you might be able to take out studs and replace them with load-bearing cabinets. If you don't know how to do this then I would suggest you go to several diy stores and ask questions. Don't get advice from only one person. I remodeled and finished some not finished areas of a house, and I learned that by asking as many people as possible I usually got the ame (correct) answer from several sources (at least three and better four or five). If you are taking out load-bearing areas of walls you will need a permit to do so. If you are making cabinets that fit between the exisiting studs you probably won't need a permit, BUT you will need to make sure there is no wiring or plumbing in those areas of the wall you intend to modify.
