Any Ideas for this corner with the wood stove pipe?

Sure. I had to take down an old above the stove microwave...your fan is not as heavy. Measure your opening to get the corect replace ment. If you have up to date wiring it shouldn’t be hard to wire if you follow the instructions. My 50’s fixer...I called the electrican ...not too many 3 prong out lets.
Take a photo of it and go to a home center and they will match it up for you. When you start to replace it be sure you switch it off from the electric panel box. Be sure to note how you removed the fan and read the instructions that came with the new one and replace it. Should be simple for you.

You can take it out with no problem, but you have to shut off the electric to the kitchen. You also have to know how to disconnect the wires, and reconnect the wires. Call some local handyman in your area, that has an electrical license. It shouldn't cost more than $40.
