First you need to find out why they are not level. If some foundation has settled that may be ok, and you would use a house lifting screw jack to raise floor joists up a bit and insert Pressure Treated Wood, shims, concrete block, etc. as appropriate to bring the floor up to level.
If the slope is caused by wood rot or termites then the material must be replaced and the infestation or water source eliminated.
If the floor is bowed along a joist, the joist can be jacked up and either supported with a pier or have another joist sistered along side to help take the weight. Again try to determine why this has happened first.
If you are unsure of the repair, contact local building inspector and ask about it - they may come over and find the cause and recommend proper repair. Most any decent carpenter can do these repairs for you - but get estimates from at least 3 and preferably those recommended by someone who had work done for them. Please be careful!
Check the floor boards for loose nails and check the boards back to back, and make sure their level. You need a 3. Ft level, if you don't have one rent one from Homedepot or Lowe's, for a small fee. Put the level at randomly parts of the floor and see where your off.
