I have the same and I keep my heaviest pots in the bottom for weight so if I use the over hang for dishes, even people leaning, and I have had no problem, my overhang we put on the island is nearly as wide as the original cabinet. I have never had a problem

We did exactly what you are describing, and yes, for stablilty you need to consider using legs on the overhang side...adults like to lean on counters and kids like to dangle from counters! We cut down an existing island base board cabinet, covered the open (cut) side with wood from the back of the discarded half, and purchased thick oak stair newel posts from a local building supply house. We added fancy cornices at the top of the posts to hide the screws. My only complaint is not making the top large enough to accomodate 4 stools. We used the existing island top since we had just redone the kitchen in a few years ago. The post above this one has some great examples on google search . Good luck!
