Hello, you can use polyurethane over the chalk paint. If you have stains you need to cover I would use kilz or if you are covering a dark color with a light color, otherwise I would so you do not have to use it.
Like is definitely recommended before painting with any paint. I'm not sure if a poly finish over chalk paint; I will be using a tinted wax finish over my cabinets once they are painted. I prefer the "antiqued" look of the wax, but I have no knowledge as to how it will hold up in my kitchen. Hope this helps.
Yes you can use poly over chalk paint. I have a side table that gets used heavily and I wanted a more durable finish so I waxed the sides as normal but used a matte finish water based poly on the top. Looks great and has held up well!

Why are you using it if you don't like the feel? Use a nice satin finish paint.
clean the piece well, paint with the chalk paint then seal it with a polycrylic sealant in a finish of your choice (matte, satin, semi gloss or gloss) I prefer that to the wax finish
yes
