Where do you live, it would help if you would tell us. If you have freezes. or even frost it will kill a plant. In the pot, there is no protection for the root ball like there is in the ground. It will freeze and turn to mush.
I would allow them to go into dormancy by packing them in a large box filled with peanuts packing material and store in the garage depending on your climate.
ginger grows in hawaii, so if you have that climate, you are golden. but if you have freeze, you need to bring them in. give tthem plenty of light and put a saran wrap around them to keep them moist. check water each day.
Most gingers do go dormant so it's best to let your's go dormant since you don't know what they are. Keep barely moist over the winter. When you see new growth give more light and water.

I have two kinds of ginger, and both are grown outdoors in the ground here in SE Texas. I cut them back to about 6 inches out of the ground, then cover them with a blanket on frost or freezing nights. They come back up in the spring.
Hello, I would bring them in if you live in a harsh winter place. Or in a garage and cover well, but keep them watered. Or if you have a heated green house that would work as well. hope this was helpful. Have a good day.
