Making Waffles From a Mix

Waffles come from waffle irons that flip upside down to cook and have a signal for when they are done. Sometimes they are shaped like Texas. They are usually found in restaurants and motel buffets. But I wanted to make us waffles at home. I bought a waffle iron at a garage sale for $1. Eventually, I gathered all the ingredients and trimmings I needed and set to work. Yes, I am age 68, but I’m a pancake maker, not a waffle cook.
In a six cup bowl, I added two cups of complete pancake mix, 1 2/3 cups water, and 1/3 cup of canola oil. I stirred until most lumps were out. I broke up the largest of the mix lumps and stirred it up again.
When my closed waffle iron was plugged in and hot, a little red light went off. I opened it and sprayed canola oil on both sides of the waffle iron. I used a tablespoon and dipped four tablespoons of the mix into the waffle iron.
On the back of the box I found the directions and recipe I followed. According to directions, I let the waffle cook until it stopped (or almost stopped) steaming.
The mix I used was very inexpensive, being the store brand. This happened to be ”complete”, so I didn’t have to add eggs or milk. I did have to add oil.
I made the first two waffles for my husband, but I knew I was doing something special with mine. This photo also shows more of the ingredients: cinnamon-stevia in the shaker I decorated myself; Mrs. Butterworth’s Sugar-Free Pancake Syrup; regular pancake syrup.
I followed the directions for each waffle, but I shortened the time a little. When there was only a little steam, I opened the waffle iron. Sometimes I had to lift a waffle at the edges to get it out, but most just lifted out with a fork.
I put on about two teaspoons of real butter. (My kidney doctors and heart doctor told me to use a little real butter, not margarine.) I added half of a small can of peaches canned in pear juice to the waffle, and heavily sprinkled it with the cinnamon-stevia mix I made. I used four tablespoons of ground cinnamon, and three packets of stevia (a plant-based sugar substitute which goes by Truvia and other brand names.) My Nephrologist really recommends cinnamon and stevia, and she really liked my idea of mixing them.
My second waffle went on top. Then I added more butter and cinnamon-stevia. Hubby fixed me a fried egg, made with Pam spray. And there I had my lovely breakfast, complete with hot chocolate. If I can make beautiful waffles, so can you!

Thank you, Leah. I made some more waffles this past Saturday. We had then with blackberries as big as my thumb and bananas sliced like coins. Another great breakfast. 😇
