You can try to spray paint them with fabric paint.I would test a scrap piece first
Wash them and see if some of the color comes out. If not you could buy a dye or make your own and dye them. For a pinkish beige you can use tea or for a brown beige you can use coffee, both of these methods will require a lot of tea or coffee.
I would see if you can return them.
You could try bleaching them instead of dying them. Might need an extra large dose of bleach but it should lighten them considerably.
What is the fabric content? Cotton? if not then bleach may discolor the fabric more.

Rit (the dye company) makes a product called dye remover(or something like that). It's much easier on fibers than bleach and can be used on some non-cotton fabrics.

I've been using paint drop cloths for years to slip cover furniture and make drapes. The nature of paint drop cloths is to absorb paint, so, it's likely that the blend is mostly cotton as synthetics don't absorb liquids very well. I've always purchased home depot's fabric cloths as I have found them more consistent in color and weave. It takes some picking around to match those two things when your project requires multiple packages (2 panels for a set of drapes). I know they don't dye these cloths, so I'm not sure why yours appear gray. You can do one of two things. Return them if you think they won't work because of the color. I would wash them with regular detergent. Be sure to wash them separately as you want them to agitate with out bunching together. If that doesn't work as far as the color, wash them again, separately, with bleach (same amount in each wash). Maybe that will do the trick. Note: Always wash these drop cloths before you start your project as they will shrink, especially the hems. You can press with a steam iron to smooth out most of this problem.
Bleach should make 100% cotton whiter. If there is polyester in them it will turn the fabric more yellow or grayer. Your call. If they weren't expensive you might try the bleach and then move on to the next step.....You can also try OxyClean. It is a bleach alternative (not bleach) I've use it on old quilts and lace tablecloths that were yellowed.. Good Luck! Don't you just love when your plan doesn't quite come together.
Canvas drop cloths can be bleached and then dyed. Or bleached and then use paint to make lines or whatever. Just make sure you you place them through 2 rinsed if you plan to dye or paint!
