use a fabric softener in the rinse or use fabric softener sheets in the dryer - and try drying in the dryer on a lower heat.
My laundry game changed 10 years ago. I use a free and clear type detergent, and not too much, add baking soda to the wash and replaced fabric softener with white vinegar. In the dryer I use felted wool dryer balls. Makes all the difference in the world. The reason your towels are stiff and or scratchy is because of too much laundry product, overcrowding the washing machine so that it doesn't rinse and then tossed in the dryer on too high a heat setting which "cooks" all those chemicals into your towels making them scratchy.
