My kitchen redo might be a little drastic for most but suffice it to say I'm planning to use aluminum roof flashing for the back splash - it's about 18" wide and is sold by the foot. It's easy to install and my whole kitchen backsplash will cost me $22! There are no upper cabinets, just shelves, bottom cabinets are just drawers (so I can see everything front to back without taking everything out). The drawers are dark charcoal gray and the countertop looks like white carrera marble so the aluminium should blend in nicely.

we used a sheet of galvalume metal roofing. we screwed it into the stud along the outer edges, which are now covered by the cabinets and counter. It looks great. It has a brushed finish so is easier to keep looking nice than stainless steel AND, unlike steel, it is magnetic! �
For a cheap but good looking backsplash use wallpaper.

I like the look of ship lap. You can create this look with paint. You would need to create the lines using painter's tape. Ship lap is "in" right now.
I am using 3x6 white subway tile with gray grout.
