Put them in a sack in the fridge. They'll winter just fine in there. Plant in spring.
I'm in zone 5 also and I have a sweet potato vine, but I keep mine inside all the time as a houseplant. Here is a video that covers our zone 5, I hope it helps.

Sweet potatoes are so easy to grow - throw the old vines in the compost pile. Start new ones in the spring.
