Been there, done that. I store things I'll never use back there
I have a corner cabinet like this and it has a turn table, but it opens weird and it's frustrating so we store things in there we might pull out once a year for the holidays or appliances we rarely use.
I use cookie sheets as "drawers" - find cookie sheet (s) that will best fit your space and pile everything on top of them. I have exactly the same problem.

I put in one of those puck lights so that I can see what I'm reaching for and try to store things there that I use just a few times a year.
Looks like your refrigerator is too large for the space. It would be a good space to store cookbooks, but first install a battery operated light to see easier.
I agree with Naomie. You can use cookie sheets, or plastic trays/bins from the dollar store. Store what ever you use less in the dead corner. Easier to pull out.move trays than getting on your hands and knees. I have the same problem.
The only way I can see to utilize that space would be to use a large turntable this way you just spin amount and get what you want I am a huge fan of turn tables I also use them for my spices in a small closet so you don’t have to hit everything before you get to the back
You could also look at some of the cabinet modifying hardware available like Rev-a-shelf..... https://www.amazon.com/Rev-Shelf-5WB2-1222-CR-Cabinet-Pull-Out/dp/B00H46MB5K/ref=pd_bxgy_201_img_2?_encoding=UTF8&psc=1&refRID=CHHK64MN5842CJCZQWFH&dpID=61HfQtBWYHL&preST=_SY300_QL70_&dpSrc=detail

I had the same problem and had full shelves as well. The space went into the corner. I purchased the 16 x 22 x 6 plastic underbed containers and I used 3 on each shelf. I don't use the lids for the containers. Items that I rarely use are placed in the ones that go back in the corner. The containers can be pulled out to reach what is in the back and can be removed to slide the corner tray over when you need to access it. I also use these for pull out drawers underneath my square microwave cart. I store my glass lids and cake pans underneath. The house I have now wastes the space in the corner and it is not accessible. Good luck!
If the other side of the cabinet is not up against a wall, (like in a breakfast bar) cut a door in it on the other end from the current door. That way you have access to the whole cabinet. Otherwise use a lazy susan.
I also use shallow lid storage containers and keep various holiday items in each. One has all our Xmas movies and music in there plus theme plates and napkins etc...one has Halloween items...it allows us to know where these things are, but they are clearly seasonal and don't need to be easily accessible the majority of the year :)
I replaced a cabinet like yours with a double shelf lazy susan.
That’s a perfect place to store a roasting pan and big platters you only use a couple of times a year. Whatever you store there, put in shallow cardboard boxes. You can use long tongs or a grabber to pull the boxes out. Even better, tie cord or rope handles on the cardboard boxes to make pulling them out easier. I’m fortunate to have a corner lower cabinet with a built-in lazy Susan. If you want to try that idea, shop some thrift stores or Goodwill stores. Even if you use boxes off to the right, you may want to use a lazy Susan on the left. 😇
there are after market solutions, house no. 2 had a unused hard to reach space . metal corner kit on a track fixed it. pull on the 1st wire tray, the other came along.
Buy drawer (sides no more than 3") Habitat for Humanity is best place. You can pull out drawer to get to items. Find metal file separator for cookie sheets. another for lids. Good luck.
